Author: The Christmas Guide
1tsplight olive oil
Fruit, maple syrup or icing sugar to serve
Whisk the egg, milk and vanilla or cinnamon together in a wide shallow bowl that's large enough to fit two slices of brioche in it
Place two slices of brioche in the liquid and leave for around 15-30 seconds depending on how thick the bread is. Carefully turn them over and leave for another 30 seconds.
Heat the oil in a large non-stick frying pan over a medium heat. When it's hot, add the soaked brioche to the pan and cook for 5 minutes or until it is golden
Flip the slices of brioche over and cook the other side for another 5 5 minutes. Transfer to a warm plate and cook the other two slices in the same way. You may need to add a little more oil to the pan.
Serve the Christmas Spiced French Toast with a sprinkle of icing sugar and some fresh fruit or berries. You could add a drizzle of maple syrup if you like or even a scoop of vanilla ice-cream to turn this breakfast dish into dessert.
